Thai Pork Red Curry with Pumpkin

Fancy trying something a little bit different this halloween? Tukata has created this tasty new Thai recipe for you to try this weekend.

Serves 4


  • 500g pumpkin cubes
  • 400g Pork tenderloin, cut into chunks
  • 1 ½ tbsp Tuk Tuk Foods Thai Red Curry Paste
  • 100ml water / chicken stock
  • 1 tin of creamed coconut
  • 1 tbsp Vegetable oil
  • 1 tsp chopped ginger
  • 1 clove of garlic, crushed
  • 4tbsp fish sauce
  • 2 tbsp soya sauce
  • 1 tsp sugar
  • 5 kaffir lime leaves, shredded
  • 15 Thai sweet basil leaves
  • 1 red chilli, desseded and shredded, for garnishing


  1. Heat oil in frying pan over low heat.
  2. Fry ginger, garlic and red curry paste until aroma rises.
  3. Add pumpkins, water/stock and let it simmer for 5 minutes.
  4. Add pork, creamed coconut, fish sauce, soya sauce and sugar. Stir and let it cook for approximately 20 minutes until pumpkin and pork is tender.
  5. Remove from heat and sprinkle kaffir lime leaves, sweet basil and red chillies.

The dish is now ready to serve with plain boiled Jasmine rice, noodles or bread.

Thai Cookery Class

We have some new dates available for Tukata’s Thai cooking classes at her Hillside House Garden Kitchen.

Each course will start at 10:00am and finish at approximately 2:30pm with a welcome drink, recipe pack, and selection of ingredients. This is then followed by a demonstration of Thai cooking, preparing and cooking your own 3-course lunch, a glass of wine and a chance to take home a goody bag of Thai food products and ingredients.

Free Thai Recipes

Some of you who follow us on facebook or twitter may have already heard that we are currently working on providing you with some fantastic Thai recipes that you can easily download and print. As they are in PDF format, you should also be able to use them on your iPhone and other modern mobile phones/smartphones.

To start with, we are aiming to create three free recipes that will make use of each of our delicious Thai curry pastes. This will help give you some inspiration in your kitchen and hopefully get you experimenting with Thai cooking (if you don’t already!). Each recipe will also feature a few little tips from Tukata, just in case you cannot get hold of a certain ingredient, have certain allergies, if you are vegetarian, and various other options.

Tuk Tuk Foods at Knossington & Somerby Pre-school

Tukata from Tuk Tuk Foods recently performed a cooking demonstration to help raise money for the Knossington and Somerby Pre-school in Rutland. It turned out to be a great success, making over £450 and was enjoyed by many.

We also received this wonderful e-mail from their Secretary:

Dear Tukata,

A huge thank you for the most wonderful Thai Cooking Demonstration that you did for us last week.

The food was amazing and I have had so much feedback from people regarding that: ‘delicious’, ‘awesome’, ‘scrumptions’! However, I think the thing that captivated everyone the most was your passion for food. This, coupled with an extraordinary talent you have for making the whole process of food preparation so colourful and fun, appears to have inspired even the non cooks that came along on the night.

Thanks to your enormous generosity and kindness we were able to make over £450 for the pre-school which we will be using to buy some new equipment for the school and to replace our much needed printer.
